They're an east coast tradition! Chicken Bones are a spicy cinnamon flavoured hard candy, hand crafted to ensure a centre of unsweetened chocolate in every bite. In 1885, a candy-maker Frank Sparhawk invented Chicken Bones at Ganong, Canada's oldest candy company, in St. Stephen, New Brunswick.
Why he called them Chicken Bones — or how the candy has become so inextricably linked with Christmas — is a bit of a mystery. But many Maritimers feel the holidays wouldn't be the same without them.
